Far from the well-trodden coffee routes of Central America, this lot represents a region with enormous potential and a producer committed to proving it — through meticulous fermentation protocols, selective picking, and uncompromising attention to process.
The Double Fermentation Washed method used here — aerobic fermentation between 72 and 95 hours — builds layers of complexity while preserving the clean structure and balance that defines great washed coffee. Every step, from cherry reception to outdoor drying,
is carried out with the precision of a producer who understands that quality lives in the details.
The cup opens with warm hazelnut and a citric brightness, moves through notes of fresh orange and a gentle sweetness, and finishes long with toffee warmth and a clean, satisfying close. Medium body, creamy texture, beautifully balanced.
